Cooksprepare and cook a wide variety of foods. They are employed in restaurants,hotels, hospitals and other health care institutions, central foodcommissaries, educational institutions and other establishments. Cooks are alsoemployed aboard ships and at construction and logging campsites. Apprenticecooks are included in this unit group.

Cooks perform some or all of the following duties:
Prepareand cook complete meals or individual dishes and foods
Prepareand cook special meals for patients as instructed by dietitian or chef
Scheduleand supervise kitchen helpers
Overseekitchen operations
Maintaininventory and records of food, supplies and equipment
Mayset up and oversee buffets
Mayclean kitchen and work area
Mayplan menus, determine size of food portions, estimate food requirements andcosts, and monitor and order supplies
Mayhire and train kitchen staff.
Cooks may specialize in preparing and cooking ethnic cuisine or special dishes.

Completionof a three-year apprenticeship program for cooks

Completion of college or other program in cooking
or
Several years of commercial cooking experience are required.
Tradecertification is available, but voluntary, in all provinces and territories.
RedSeal endorsement is also available to qualified cooks upon successfulcompletion of the interprovincial Red Seal examination.

Progressionto supervisory or more senior positions, such as chef, is possible withexperience and training.
